SPAETZLE IN GARLIC BUTTER
1/2 cup water
1 1/2 cups flour
1/2 cup defrosted cholesterol-free frozen egg product or 2 whole, fresh eggs
1 teaspoon salt (divided)
4 cups ice water
1 tablespoon margarine
1 clove garlic, minced
1 tablespoon snipped fresh parsley
In medium mixing bowl, combine 1/2 cup water, the flour, egg product and 1/2 teaspoon salt. Stir with wooden spoon until well blended. Set aside.
Combine 2 quarts water and remaining 1/2 teaspoon salt in 4-quart saucepan. Bring to a boil over medium-high heat.
Using spatula, scrape small amount of batter through backside of coarse grater over boiling water. Batter should drop in small pieces. When spaetzle floats to surface of water, remove with slotted spoon and place in ice water. Repeat with remaining batter. Drain water from spaetzle. Set aside.
In 10-inch non-stick skillet over medium heat, melt margarine. Add garlic and spaetzle. Cook 7 to 10 minutes, or until spaetzle is hot and just begins to brown, stirring occasionally. Stir in parsley. Serve hot.
