CARAMELIZED COLA ROAST
1 (3-pound) very lean beef bottom round roast
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 cup diet cola
1/2 cup chili sauce
1 tablespoon Worcestershire sauce
Preheat the oven to 325 degrees F.
Coat a roasting pan with nonstick cooking spray and place the roast in the pan. Season with salt, pepper and garlic powder.
In a small bowl, combine the diet cola, chili sauce and Worcestershire sauce; pour over roast.
Cover with aluminum foil and roast for 2 1/2 to 3 hours, until tender.
Slice and serve topped with the sauce from the pan.
Makes 9 servings, each 2 to 3 slices
Nutrition information per serving: 234 calories, 8 grams total fat (2.8 grams saturated fat), 4 grams carbohydrates, 108 milligrams cholesterol, 376 milligrams sodium, 35 grams protein, zero fiber, 2 grams sugars.
Diabetic exchanges: 4 lean meat.
