Special Pumpkin Soup

1 1/2 cups white bread crumbs
6 pounds pumpkin -- w/flat bottom(4-8lb)
7 tablespoons butter
1 teaspoon salt
2/3 cup minced onion
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1/2 teaspoon sage
1 each bay leaf
1/2 cup swiss cheese -- grated
chicken broth -- fill to 1/2" of rim
1 cup heavy cream

Dry bread crumbs in oven at 300* for 15 minutes. Cut a lid in pumpkin, remove seeds and fibrous insides; discard. Rub inside of pumpkin with mixture of 1 tablespoon butter and 1/2 teaspoon salt. Cook onions in 6 tablespoons butter for 10 minutes. Stir in bread crumbs, continue stirring and cook 10 minutes longer. Stir in 1/2 teaspoon salt , other seasonings and cheese. Put crumbs and cheese in pumpkin. Fill pumpkin with enough chicken broth to fill with in 1/2" of top. Put pumpkin lid on. Place on cookie sheet and bake at 400* for 1 1/2 hour. Reduce heat to 350*. Remove lid and add enough cream to fill to rim. Put on lid and heat through. To serve, use pumpkin as a soup tureen. Make sure to ladle out the soft insides of pumpkin. Garnish with parsley.
