SESAME NOODLES WITH CHICKEN
1 clove garlic
1 cup fresh cilantro leaves
3 tablespoons fresh lime juice
1 tablespoon dark Asian sesame oil
3 tablespoons low-sodium soy sauce
1 teaspoon hot pepper sauce
1/2 cup smooth peanut butter
1 whole boneless skinned chicken breast, cut in thin strips
8 ounces soba noodles
2 green onions, sliced thinly on diagonal
Bring large pot of water to boiling. Cook garlic in water for 1 minute. With slotted spoon, remove garlic from water; keep water boiling.
For the Sesame Sauce, press blanched garlic through garlic press (or chop) into food processor or blender. Add cilantro leaves. Whirl to chop finely. Add lime juice, sesame oil, soy sauce, pepper sauce and peanut butter. Whirl until consistency of sauce. Thin sauce with 1/4 cup of the boiling water, or as needed; set aside.
Place strips of chicken and noodles in the pot of boiling water; cook 2 to 3 minutes or until chicken is cooked through and noodles are tender; drain.
Toss drained chicken and noodles with sesame sauce in serving bowl. Garnish with green onions. Serve immediately.
