Recipe: Spelt Flour Applesauce Muffins

Dairy-free Spelt/Applesauce Muffins

Preheat your oven to 400 degrees.
Mix together:
1 cup spelt flour
1/2 cup oat bran
3/8 teaspoon salt
3/8 teaspoon soda
1/2 teaspoon cream of tarter
Mix together in a seperate container:
3/4 cup applesauce
1/4 cup prune juice
1 TBS oil
Add wet ingredients to dry ingredients, mix only until the wet ingredients are spread through the bowl. Batter will be
lumpy and have dry spots. Spoon into muffin pan.
Bake for 20 minutes.
