EGGSTRA SPECIAL SPAGHETTI
1 (7 ounce) package uncooked spaghetti
8 slices bacon, cut into 1/2-inch pieces
1/2 cup chopped onion
4 eggs, slightly beaten
4 ounces processed American cheese, cubed (about 2/3 cup)
Chopped parsley or chopped chives (optional)
Cook spaghetti according to package directions. Drain and set aside.
While spaghetti cooks, cook bacon in a skillet over medium-high heat until crisp. Remove from skillet with a slotted spoon; drain on paper towels.
Add onion to drippings in skillet, and cook 5 minutes or until onion is tender, stirring constantly.
Reduce heat to medium and add cooked spaghetti and bacon to skillet with onions. Add eggs and cheese, stirring frequently until eggs are set and cheese is melted.
Transfer mixture to a serving dish; garnish with chopped parsley or chives, if desired. Serve immediately.
