Recipe: Spinach Salad

Side Dishes - Vegetables

This is a great recipe for potlucks.
When I make this, there is very seldom any left.

1 lb. Fresh Spinach (torn)
1 lb. Fresh Spinach (torn)
1 lb. Fresh Bean Sprouts (4 cups)
1 - 10 oz. Can of Water Chestnuts (sliced)
2 - 3 Hard Boiled Eggs, sliced (Opt.)
1/2 lb, Cooked Bacon - Crumbled (Canadian if available)
Fresh Mushrooms(sliced)if desired

Dressing:

1/2 cup oil
1/4 cup vinegar
1/3 cup sugar (or less if you don't like it too sweet)
1/2 cup catsup
1 tbsp worcesteshire sauce
1 clove garlic (crushed)
1 medium onion (chopped fine)
Store in fridge in glass jar
Make dressing to days ahead, shake well and pour over other ingredients before
serving.
