Recipe: Picnic Frank and Bean Broil (using evaporated milk, 1960's)

PICNIC FRANK AND BEAN BROIL



2 tablespoons butter
1/2 cup chopped onion
1 1/2 tablespoons flour
2 to 3 tablespoons chili powder
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2/3 cup (5 oz. can) undiluted Carnation Evaporated Milk
1/2 cup (2 oz.) grated process American cheese
1 cup (8 oz. can) Contadina Tomato Sauce
3 cups (1 lb. 12 oz. can) drained baked beans

Melt butter in skillet; add onion. Saute until tender.

Stir in flour, chili powder, salt and pepper. Slowly add Carnation. Stir over low heat until mixture thickens.

Add cheese, tomato sauce and beans. Heat until cheese melts.

FOR PICNICS:
Heat sauce in covered pan over fire. Split 10 to 12 frankfurters lengthwise and broil. Toast split buns over fire. Spread with mustard. Serve frank on bun topped with beans (recipe above). Top with additional grated cheese and pickle slices, if desired.
