Recipe(tried): Stir Fry Beets

Peel your beets & shred them in coarse shred. Heat a bit of butter in a saute pan, put the beets in the pan & stir fry them to tender crisp. Sprinkle with a bit of salt & pepper and chopped parsley. Add more butter if you like. YUMMY! They have a nut-like flavor.
