STUFFED FRANKFURTERS
1 lb fat-free frankfurters
8 oz sauerkraut, canned, rinsed and drained cut lengthwise
1 cup white bread crumbs
2 whole egg whites, slightly beaten
1/2 cup Swiss cheese, shredded
1/2 cup onions, chopped
Place frankfurters in a 2-quart glass baking dish; set aside.
In a mixing bowl, combine egg whites, onions, sauerkraut, and crumbs. Mix well. Mound mixture in cut frankfurters.
Microwave, covered, on high for four minutes, or until heated through. Sprinkle with cheese. Microwave, uncovered, on high for one minute, or until cheese has melted.
Servings: 8
