PORK AND KRAUT SCALLOPED POTATOES
1 pound boneless pork, cut in 1/2 x 1/2 x 1-inch strips
1 tablespoon butter or margarine
1 (16 ounce) can sauerkraut
3 cups sliced, peeled potatoes
2 tablespoons all-purpose flour
2 teaspoons salt
1/2 teaspoon ground black pepper
Water
2/3 cup nonfat dry milk powder
1 tablespoon butter or margarine
Paprika
In skillet, brown pork strips on all sides over medium heat in the 1 tablespoon butter.
Drain the sauerkraut well, reserving liquid. In a buttered 4-quart casserole, place layers of potatoes, drained sauerkraut, and browned pork strips, sprinkling each layer with a mixture of the flour, salt, and pepper.
Add water to reserved sauerkraut liquid to make 1 2/3 cups. Mix in the milk powder. Pour milk over ingredients in casserole. Dot with the remaining 1 tablespoon butter. Sprinkle with paprika.
Bake in a 350 degree F oven for 1 1/2 hours or until potatoes are tender.
