Recipe: Western Omelet with Herbs (microwave, serves 1)
Breakfast and BrunchWESTERN OMELET
"Microwaved omelets do not brown on the bottom but they cook rapidly and are easily folded in half. The use of a round pie plate helps shape a perfect omelet."
1 tbsp margarine or butter
3 eggs, beaten
1/4 cup finely chopped fully cooked smoked ham
2 tbsp finely chopped onion
1 tbsp finely chopped green bell pepper
1 tbsp chopped fresh parsley (optional)
1 tbsp chopped fresh chives (optional)
Salt and pepper to taste
Place margarine in pie plate, 9 x 1 1/4 inches. Microwave uncovered on high 20 to 30 seconds or until melted.
Mix eggs, ham, onion and bell pepper; pour into pie plate. Cover with waxed paper and microwave on high 2 minutes 30 seconds to 3 minutes 30 seconds, pushing cooked edge of omelet to center after 1 minute 30 seconds, until center is set but still moist.
Loosen edge of omelet; sprinkle with fresh herbs, if using. Fold just to center. Slide omelet onto serving plate so folded side rolls over again and edge is on bottom, or fold in half. Sprinkle with salt and pepper.
