Recipe(tried): Sunday Dinner at our House - Buttermilk Chicken with Mushroom Gravy, Easy Sweet Potatoes

Today for lunch we had: Buttermilk Chicken with Mushroom Gravy, rice, zipper cream peas, CLAUSSEN Pickles, thinly sliced fall tomatoes, easy sweet potatoes, rolls, Sister Schubert's Orange Rolls, and sweet tea with lemon.

This buttermilk chicken recipe is one of the best that I have tried lately. The chicken is juicy and the gravy is delicious!

Buttermilk Chicken with Mushroom Gravy

4 chicken breasts, skinless and boneless
2 cups buttermilk, divided
3/4 cup flour
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
1/2 tsp. poultry seasoning
1/4 cup butter

Gravy:
1 onion, sliced into rings
1 8 oz. pkg. mushrooms, sliced
1 red bell pepper, thinly sliced
1 large can cream of chicken soup, may use 98% fat-free
1 tsp. butter

Combine flour and seasonings. Dip chicken into 3/4 cup of buttermilk. Remove chicken from buttermilk and roll in flour mixture. Melt butter in baking pan. Put chicken into pan. Bake at 425 degrees for 30 minutes, uncovered. Turn chicken over and bake for 15 minutes.

Prepare gravy by putting the cut vegetables in a microwave-safe bowl along with the tsp. of butter and cooking on HIGH for 4 minutes. Remove the bowl from the microwave and add the remaining buttermilk and the can of cream of chicken soup. Mix thoroughly and pour over the chicken in the baking pan. Bake an additional 20 minutes. Serve with rice or mashed potatoes.

Easy Sweet Potatoes

2 large sweet potatoes, that have been baked
2 T. brown sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 T. granulated sugar
2 T. butter

In a microwave safe dish, put the butter in and allow to melt. Peel the sweet potatoes and slice into 1/2" thick pieces. Swirl the butter in the dish so that it will coat all of the surfaces. Place the potato slices on top of the butter. Sprinkle the brown sugar, cinnamon, nutmeg, and granulated sugar on top of the potato slices. Microwave for 8 minutes using 50 power. Remove from the microwave and serve.
