Recipe: Carrot Ring with Green Peas and Mushroom Sauce (not Dear Abby's)

CARROT RING WITH GREEN PEAS AND MUSHROOM SAUCE

2 cups hot mashed carrots
2 tbsp. margarine
2 eggs, lightly beaten
1/4 cup milk
2 tbsp. flour
1 tbsp. onion, grated
1 tsp. salt
1/2 tsp. pepper
FOR SERVING:
hot cooked peas
1 (10 3/4 oz) can condensed cream of mushroom soup, undiluted, heated

Cook carrots until tender, drain. Mash carrots. Stir in margarine and cool to room temperature.

Add eggs, milk, flour, onion, salt, and pepper. Put into well-greased ring mold. Set mold in baking pan with 1-2 inches of hot water.

Bake in moderate (325 to 350 degree) oven for 45 minutes.

Turn ring onto serving dish. Fill center with hot peas and pour cream of mushroom soup over the ring.
