Recipe: Sesame Chicken Salad (not Baker's Square)

Sesame Chicken Salad

2 chicken breasts - grilled
Teriyaki marinade (optional)
3 tbsp sesame seeds

DRESSING
3/4 cup orange juice
1 tbsp oil
2 tbsp rice vinegar
3 tbsp water
1/4 tsp fresh ginger
1/4 tsp fresh garlic - crushed

SALAD
1 head leaf or Bibb lettuce,
1 cup water chestnuts, sliced
1 cup snow peas pod, sliced
6 green onions, sliced

FOR SALAD; Marinate chicken breasts in Teriyaki marinade and grill until done. Slice them and sprinkle with sesame seeds. Wrap in foil to keep warm while preparing salad.

FOR DRESSING: Combine all dressing ingredients and mix well.

In large bowl, combine lettuce, water chestnuts, snow peas and onions. Toss with dressing.

Divide salad onto 4 plates and top each with 1/2 of each breast.

Servings: 4
