Recipe: Surprise Red-Velvet Coca-Cola Cake with Coca-Cola Icing (using cake mix)
Misc.SURPRISE RED-VELVET COCA-COLA CAKE
FOR THE CAKE:
1 box red-velvet cake mix (or 1 box plain chocolate cake mix with a drop of red food coloring added)
Coca-Cola
FOR THE TOPPING:
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
Approximately 1/2 cup coconut (optional)
1 cup chocolate chips, divided use
1/2 teaspoon coconut flavoring (optional)
Coca-Cola Icing (recipe follows)
Preheat oven to 350 degrees F. Grease and flour a 13x9-inch baking pan.
Mix cake mix as directed on package, except substitute Coca-Cola for the water. Pour batter into prepared pan.
Mix cream cheese, 1/2 cup sugar, 1/2 cup chocolate chips, coconut and flavoring in bowl. Drop by tablespoon into cake batter in pan. Swirl with a knife to marble.
After mix is swirled into batter, sprinkle additional 1/2 cup chocolate chips over mix.
Bake at 350 degrees F for approximately 30 minutes or until done with tooth pick test in the middle. Cool down and while still warm top with icing.
COCA-COLA ICING
3/4 stick (3/8 cup) butter, melted
3 tablespoons unsweetened cocoa powder
1/4 cup Coca-Cola
1/2 teaspoon vanilla flavoring
Approximately 1 (1 lb) box powdered sugar (more or less to make your prepared thickness)
chopped toasted pecans* (optional)
Mix icing ingredients together until blended and spread on warm cake. Top with chopped toasted pecans if you like.
*TO TOAST PECANS:
Place nuts in shallow pan at 350 degrees F for five to 10 minutes stirring once or twice.
