Recipe: Blueberry Buckle

BLUEBERRY BUCKLE

"The bottom of this buckle becomes pudding-like and the top gets crispy. You can also use other fruits in place of the blueberries."

2 cups blueberries
2 tablespoons lemon juice
1 cup flour
1 3/4 cups sugar, divided use
2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup milk
1 egg
1/4 cup butter, melted
1 teaspoon vanilla
1 tablespoon cornstarch
1 cup boiling water

Preheat oven to 350 degrees F.

Place blueberries and lemon juice in an 8x8-inch baking pan; set aside.

Mix flour, 3/4 cup sugar, baking powder, nutmeg, and salt. Beat in milk, egg, melted butter and vanilla. Spread batter over berries.

Mix the remaining 1 cup sugar with cornstarch and sprinkle over batter. Pour 1 cup boiling water over all.

Bake for 40 to 50 minutes.
