Recipe: Sweet Potato Slaw (with apple, pineapple, and pecans)

Sweet Potato Slaw

Dressing:
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons honey
2 tablespoons lemon juice
1 teaspoon of grated lemon, rind of
1/2 teaspoon salt
1/4 teaspoon pepper

Salad:
3 cups of uncooked peeled and shredded sweet potatoes
1 medium apple, peeled and chopped
1 (8 ounce) can pineapple tidbits, drained
1/2 cup of chopped pecans

Dressing:
In a bowl combine the dressing ingredients and blend until smooth.

In a large bowl combine potatoes, apples, pineapple, and pecans. Add the dressing and toss to coat.

Cover and refrigerate for at least 1 hour.

Servings: 6-8
