I'm not a potato salad person. HATE it. But, I have a firm belief in trying new things. So, when I took a class on a field trip last year, I tried everything. It was wonderful!!!!
This is (Sylvia's Potato Salad) now part of my "always bring" list at family gatherings.
I put everything in for the dressing, except the relish (thought it might color it green) in the food processor, including the celery. Use about half the onion and celery if you do this because since they are pulverized, the flavor goes a lot further.
I also put the potatoes in an ice bath, or run cold water over them. Easier to handle, and easier to peel.
