Recipe: White Pie (not Burton's)

WHITE PIE (not Burton's)

1 pt. milk
1 scant c. granulated sugar
4 level Tbsp. cornstarch
whites of 3 eggs -- stiffly beaten (pasteurized egg whites)
1/4 lb. fresh coconut
1 baked pie shell (large) or 2 small shells

Mix sugar and cornstarch together.
Add to hot milk and cook until thick.
Remove from heat.
Add coconut (saving some for the top).
Fold stiffly beaten egg whites into mixture and pour into shells.
Top with remaining coconut.
