Recipe: Tater Dipped Oven Fried Chicken (1960's)

TATER DIPPED OVEN FRIED CHICKEN

"This chicken bakes to a delectable brown before your eyes, and the flavor is delicious beyond description"

1 average size frying chicken, cut into serving pieces
1 egg
2 tablespoons water
1 tablespoon sage (or 1 1/2 teaspoons poultry seasoning)
1/4 teaspoon salt
dash of pepper
1 cup instant mashed potato flakes
1/4 cup butter

Beat egg slightly and beat in water, sage, salt and pepper. Coat chicken pieces in egg mixture then coat each piece with potato flakes.

Put butter in shallow baking dish and melt in oven. Place coated chicken in this melted butter in one layer.

Bake at 400 degrees F for 1/2 hour, uncovered. Turn chicken pieces over and bake for 1/2 hour longer, still uncovered.
