NEW ORLEANS RED BEANS
1 pound dried red beans
1 chopped onion
1 clove garlic, chopped
2 stalks chopped celery
1 chopped red bell pepper
1/2 cup tomato paste
3 tablespoons soy sauce
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon ground cayenne pepper
Salt to taste
Hot cooked rice (for serving)
Soak dried beans in water to cover overnight.
Drain and cover with fresh water. Bring to a boil, reduce heat and simmer for 1 1/2 hours.
Add remaining ingredients and continue cooking for 1 hour.
Serve over hot cooked rice.
Makes 6-8 serving
