My son also has issues with textures. He stopped eating fruit and vegetables at the age of 2. We sneak pureed veggies into anything he will eat. Unfortunately it is in very small quantities, but better than nothing. Pureed cauliflower goes in mashed potato, pumpkin and sweet potato work in muffins and pancakes, spinach in brownies. I got a few ideas from Jessica Seinfeld's book..and i know someone else did a similar cookbook about sneaking nutrition into different foods.
