Recipe: Crazy Banana Cake (mix and bake in the same pan) (Great American Recipe Cards, 1987)

"Mix and bake this cake right in the same pan. The next time you have a few extra ripe bananas on hand, peel them and freeze in a plastic bag."
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
2/3 cup chopped walnuts or pecans
2/3 cup mashed very ripe bananas
1/3 cup vegetable oil
1/3 cup buttermilk (or unflavored yogurt)*
2 large eggs
1 tsp. banana flavoring
Lightly sweetened whipped cream (optional, for serving)
Into an 8-or 9-inch square cake pan, measure the flour, sugar, baking powder, baking soda, salt and nuts. Stir with a fork to mix well.
Add remaining ingredients; stir until blended and smooth.
With a rubber spatula, scrape any ingredients clinging to the sides, corners and bottom of pan into the batter.
Bake at 350 degrees F for 30 to 35 minutes until a toothpick inserted in the center of the cake comes out clean. Cool in pan on a rack. Cut into 9 squares.
Good served with:
Serve warm with a dollop of lightly sweetened whipped cream.
*Tip: If you do not have buttermilk or unflavored yogurt on hand, mix 1 1/2 tsp. vinegar or lemon juice in a glass cup measure and add plain milk to measure 1/3 cup.
Makes one (8- or 9-inch) square cake, 9 servings
