Recipe(tried): Tomato, Basil, and Ham Quiche

TOMATO, BASIL, AND HAM QUICHE
We have had a week of 90-degree and humid weather, so I haven't had the oven on much. Today will be in the lower 80's, so I'll be making one of our favorites. I serve this with a fruit salad with yogurt dressing.

9-inch prepared pie crust (I use Pillsbury)
1 tsp. olive oil
1 cup chopped onion
2 cloves garlic, crushed
1 green zucchini, sliced
1 yellow squash, sliced
3/4 cup shredded mozzarella
1/2 cup diced ham
1 cup sliced tomatoes
1/4 cup fresh basil
1 cup evaporated skim milk
1-1/2 tsp. cornstarch
2 eggs
1 egg white
pepper to taste

Spray pie plate with oil spray. Place crust in place.

Saute onion and garlic in oil a few minutes.

Spread onions in crust, then zucchini and squash, then cheese, ham, tomatoes, basil.

Combine milk, cornstarch, eggs, and pepper in blender. Pour over tomatoes.

Bake at 350 for 1 hour and 10 minutes.
