Recipe(tried): Tomato Sauce

This is the sauce I use as a base for a lot of things; sauces, soups, pizza topping, lasagne ...

3 tbsp olive oil
1 onion, peeled and chopped
3-5 cloves garlic, chopped finely
2 large carrots, chopped
3 cans tomatoes, roughly chopped
1 cup dry red wine, vegetable stock or just water
2 bay leafs
dried herbs according to taste; for spaghetti sauce, I usually add 2 tsp oregano and 2 tsp basil
a pinch of sugar, if needed
freshly ground pepper
salt

Warm the oil in a pan and fry onion, garlic and carrot gently without browning for a few minutes. Add tomatoes, liquid and herbs and bring to a gentle boil. Season, simmer for 1-2 hours, stir frequently and add more liquid if needed. Adjust seasoning. Use blender or food processor if you want a smooth sauce (but remove bay leafs first). You can leave out the carrots but then you need more sugar.
