Recipe: Tomato Spice Cake/Hunt's Very Special Cake

One with Campbell's tomato soup.
One with Hunt's tomato sauce.

TOMATO SPICE CAKE

INGREDIENTS:
2 1/4 cups cake flour - (or 2 cups all-purpose flour)
1 1/3 cups sugar
4 tsp baking powder
1 tsp baking soda
1 1/2 tsp allspice
1 tsp cinnamon
1/2 tsp ground cloves
10 3/4oz can Campbell s condensed tomato soup
1/2 cup shortening
2 lg eggs
1/4 cup water

INSTRUCTIONS:
Pre-heat oven to 350
Generously grease and flour two round 8 or 9 inch layer pans, 0r one 13x9x2 inch oblong pan.

Measure dry ingredients into large bowl.
Add soup and shortening.
Beat at low to medium speed for 2 minutes, or 300 strokes with a spoon, scraping the bottom and sides constantly.
Add the eggs and water, beat 2 minutes more, scraping the sides frequently.
Pour batter into prepared pans.

Bake at 350 for 35 - 40 minutes or until done to the toothpick test.

Let stand 10 minutes; remove from pans and cool.


BUNDT PAN METHOD:
Proceed as above.
Bake in lightly floured 2 1/2 Qt Bundt pan, at 350 for 50 - 60 minutes or until it tests done.
Cool right side up in pan for 15 minutes.
Remove from pan and let cool completely.

Sprinkle with confectioners sugar.

HUNT S VERY SPECIAL CAKE

INGREDIENTS:
3 cups sifted flour
1 1/2 cups sugar
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
3/4 tsp nutmeg
3/4 tsp ground cloves
3/4 tsp allspice
3/4 tsp salt
8oz can Hunt s Tomato Sauce
1 1/2 tsp baking soda
2 lg eggs, beaten
3/4 cup pure vegetable oil
1 cup chopped nuts
1 1/2 cup golden raisins
1/2 cup orange or pineapple juice.


INSTRUCTIONS:
In a large mixing bowl combine: flour, sugar, baking powder, spices and salt.

In a small bowl, thoroughly mix Hunt s tomato sauce and baking soda, then add to flour mixture.

Stir in eggs, oil, nuts, raisins and fruit juice, and mix well.

Pour batter into a greased 10 inch Bundt or tube pan.

Bake at 350 45 - 55 minutes or until it tests done.

Turn out on a serving plate.

Dust the top with powdered sugar.
