Recipe: Chili Con Queso (CCQ) - similar to Los Banditos

Appetizers and Snacks
The actual recipe is not available on the Internet. I am enclosing a recipe that claim that it tastes similar to the Chili Con Queso. Good luck!

CHILI CON QUESO (CCQ)

"Tastes just like Los Banditos CCQ!"

MAKE A ROUX FIRST:
2 sticks (1 cup) butter
1 1/2 cups flour

Melt butter in saucepan over medium heat. Whisk in flour and cook gently 3-5 minutes. Set aside.

MIX IN FOOD PROCESSOR OR BLENDER:
1 oz can stewed tomatoes (see note*)
1 1/2 tbsp. crushed red pepper
2 fresh jalapeno peppers
2 to 3 cloves garlic
1/2 of a medium white onion, chopped

MIX IN LARGE KETTLE OR DUTCH OVEN:
7 cups whole milk (I use 2 or 3 cans evaporated milk and add water to make 15 oz. - CCQ turns out smoother)
Warm milk over medium heat.

Whisk in tomato mixture and heat until frothy. Add roux. Whisk and cook until desired thickness (doesn't take long).

STIR IN:
1 lb. good quality Sharp Cheddar cheese, shredded
1 lb. Monterey Jack cheese, shredded
(You may have to adjust the cheddar cheese +/- about 3 oz. to get desired consistency)

Adapted from source: Kim Ronsman / Trinity Family & Friends Recipe Collection

*A note from Betsy at Recipelink.com:
The recipe calls for 1 oz can stewed tomatoes but I think it may be a typo and maybe should be 1 (16 oz) can stewed tomatoes.
