Recipe(tried): TONIGHT its Pork fillet with apricot glaze.

Good Morning everyone,
Tonight I,m going to make this,its very easy and tasty:

PORK FILLET WITH APRICOT GLAZE
2LB pork fillet
2 oz butter
1 onion sliced
1 tsp curry paste
1 tsp grated fresh ginger
2 Tbls apricot jam
2 Tbls soy sauce
1 Tbls lemon juice
1 medium tin apricot halves

Saute onion,curry paste,ginger,jam,soy sauce and lemon juice,stir over low heat to disolve jam.Place pork in agreased shallow ovenproof dish,pour over sauce.Add drained apricot halves.Bake uncovered at 350f for about 25 mins.Serve pork sliced andpour over the glaze.

I,ll serve this with citrus rice and steamed green beans.For dessert I,ll make an old fashioned steamed treacle pud,definately a family favourite!!!!!!
All this talking about food this time in the morning is making me very hungry!!!
