Recipe(tried): Breadmachine Hints...
Misc.HATE THAT DOUGH HOOK HOLE ?????
Not having an operator's manual for the Regal Ware, Inc Kitchen Pro Model K6745S, I have used the "Basic White Bread" recipe many times which I copied from this site. I have always gotten good results and even get better bread, for my particular taste, by substituting 1/4 cup of bran with 2-1/4 cups of bread flour vs the straight standard 2-1/2 cups of bread flour.
I never liked the fact that the dough hook made a hole in my loaf. It may be possible that the operator's manual tells how to deal with that but I discovered that if I waited until the last mix cycle occurred at a timer display of 1:40 , I could quickly open the machine, remove the loaf pan, dump out the dough ball, remove the dough hook, grease the drive spindle with butter, and then put the dough back into the loaf pan without the dough hook, and close the lid.
This results in just the hole from the spindle in the bottom of the loaf rather than the impression of the entire dough hook which can ruin several slices of bread.
The settings which I used on my machine were program number 2, "Basic", 1.5# loaf, and "medium". This results in a 3 hour cycle with the last mix occurring at a display of 1:40. Wait till that mix is complete and then remove the loaf pan and do as noted above.
Maybe everybody knows this but I had to discover it the hard way.
