TROPICAL FRUIT BARS
1 cup boiling water
1/2 cup dried apricot, finely chopped
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup butter or margarine
1/2 cup brown sugar, packed
1 egg
1/2 teaspoon finely shredded lime peel
1 tablespoon lime juice
1/2 cup walnuts, finely chopped
Lime Frosting (recipe follows)
Preheat oven to 350 degrees F. Grease a 12 x 7 1/2 x 2-inch baking pan.
Pour boiling water over dried apricots. Let stand 5 minutes. Drain and set aside.
Combine flour, baking powder, and baking soda; set aside.
In a small mixer bowl beat butter or margarine for 30 seconds. Add brown sugar and beat till fluffy. Add egg, lime peel, and lime juice; beat well. Add dry ingredients and milk alternately to beaten mixture, beating after each addition. Stir in nuts and apricots. Spread evenly in prepared baking pan.
Bake in a 350 degrees F oven for 20 to 25 minutes or till done. Cool.
Frost with Lime Frosting. Cut into 28 bars.
LIME FROSTING
1 1/2 cups powdered sugar, sifted
1 tablespoon butter or margarine, softened
1/4 teaspoon finely shredded lime peel (optional)
1 tablespoon lime juice
1 tablespoon milk (or more)
Beat together powdered sugar, butter or margarine, lime peel, and lime juice. Add enough milk (about 1 tablespoon) to make spreadable.
Servings: 28
