Recipe: Basic Vinaigrette and 5 Variations

BASIC VINAIGRETTE
Makes about 1 cup

4 tbsp red or white wine vinegar
1 cup olive oil
1/2 tsp salt (or to taste)
1 1/2 tsp Dijon mustard
4 tsp minced shallots (optional)

Blend all until well combined.

VARIATIONS:

CHIVES:
1 tbsp minced chives
1 tbsp minced shallots
1 cup Basic Vinaigrette

CUCUMBER:
3 Tbsp grated Cucumber
1 Tbsp chopped Chives
1 cup Basic Vinaigrette

GARLIC:
1 clove garlic, processed into
1 cup Basic Vinaigrette

HERBS
3 sprigs fresh parsley, minced
1 tsp dried tarragon
1 tsp chopped fresh basil (or 1/2 tsp dried)
1 cup Basic Vinaigrette

TARRAGON:
Substitute tarragon vinegar for red or white in the Basic Vinaigrette recipe.

Makes about 1 cup
