Recipe(tried): Try Carrot and Beet Cake

Have you ever tried using some grated raw beets for part of the carrots? It's really pretty! I use a carrot cake recipe and use grated raw beets for about 1/4 of the required raw carrots....for example, if the recipe calls for 1 cup carrots, I would put in 1/4 cup beets and 3/4 cup carrots, or even 1/8 beets to 7/8 carrots...play with it. You end up with pretty red flecks of beets as well as orange from the carrot. OR, use part grated zucchini with peel,
part grated beets and part grated carrot...it makes for a pretty cake. I would, however, stir in the beets at the very end, and by hand, so that the dough doesn't turn completely pink or red. I use the raw beet that's been peeled like a potato and then grated. Then ice as usual with a cream cheese frosting. Enjoy.
