Recipe(tried): Tuna Noodle Casserole for One

Tuna Noodle Casserole for One
(Adapted from the New Joy of Cooking)

Preheat oven to 375 degrees and butter a shallow individual casserole.

1 tablespoon unsalted butter

3 oz. Mushrooms, diced
1 tablespoon finely minced chopped onion
Cook stirring occasionally until vegetables are just tender, about 5 min.

Stir in 1 tablespoon flour

Cook for one minute. Remove from heat and whisk in plus 1/8 cup milk. Return to heat and whisk while cooking until the sauce comes to a boil and thickened, about 10 min. Remove from heat, add, and whisk until melted, 1/8 to 1/4 cup grated cheddar cheese.

Drain thoroughly a 3.5 oz can tuna. Break into flakes in a bowl. Stir in hot cheese sauce and add cup cooked egg noodles and pinch of dried parsely, salt and ground pepper to taste.

Mix together 2 tablespoons of dry unseasoned bread crumbs, fine cracker crumbs, or crushed corn flakes and tablespoon butter, melted.

Bake until brown and bubbly on top, 20-35 min.
