Recipe: Turkey and Swiss Calzones, Green Beans with Tomatoes, Microwave Apple Crisp
MenusTURKEY AND SWISS CALZONES
4 cups all purpose flour
4 1/2 tsp quick rise yeast
2 tsp brown sugar
1/4 tsp salt
1 1/2 cups water
3 tbsp olive oil or vegetable oil
3 1/2 cups cubed cooked turkey
1 1/2 cups (6oz) shredded swiss cheese
3 tbsp dijon mustard
1 egg, beaten
In a mixing bowl, combine 3 cups flour, yeast, brown sugar and salt. In a saucepan, heat the water and oil. Add to dry ingredients and beat until smooth. Stir in enough remaining flour to make a soft dough. Turn onto floured surface, knead until smooth and elastic, about 4 minutes. Cover and let rise in a warm plae for 15 minutes.
Meanwhile, in a bowl, combine the turkey, cheese and mustard. Divide dough into 8 pieces. On a floured surface, roll each piece into a 7 inch circle. Place filling on half of each circle. Fold dough over filling, pinch seams to seal. Place on greased baking sheets. Brush with egg. Bake at 375 for 25 to 30 minutes or until golden brown.
GREEN BEANS WITH TOMATOES
2 lb fresh or frozen cut green beans
4 large tomatoes, seeded and chopped
1 cup italian salad dressing
Place beans in a saucepan and cover with water, bring to a boil. Cook uncovered, for 8 to 10 minutes or until srisp tender, drain. Add the tomatoes and the salad dressing, toss to coat.
MICROWAVE APPLE CRISP
1 cup graham cracker crumbs ( about 16 squares)
1/2 cup all purpose flour
1/2 cup packed brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 cup butter or margarine, melted
8 medium tart apples, peeled and sliced
Whipped topping or ice cream
In a bowl, combine the cracker crumbs, flour, brown sugar, cinnamon, nutmeg and butter, mix well. Place apples in a microwave safe 2 1/2 quart baking dish. Top with crumb mixture. Microwave, uncovered on high for 12 minutes or until apples are tender. Serve warm with whipped cream or ice cream.
