CHILI-SPICED CHICKEN
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
6 (6 ounces each) skinned chicken breast halves
Vegetable cooking spray
1 teaspoon vegetable oil
1 (14 1/2 ounce) can no-salt-added whole tomatoes, undrained and chopped
1/2 cup sliced green onions
1 teaspoon seeded, chopped jalapeno pepper
2 teaspoons cornstarch
2 tablespoons water
Combine first 5 ingredients; sprinkle over chicken.
Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add chicken; cook 2 minutes on each side or until browned.
Add tomatoes, green onions, and jalapeno pepper. Bring to a boil; cover, reduce heat, and simmer 20 minutes or until chicken is tender. Transfer chicken to a serving platter, using a slotted spoon.
Combine cornstarch and water; stir well. Add to tomato mixture in skillet; bring to a boil. Cook, stirring constantly, 1 minute or until slightly thickened. Spoon over chicken.
Servings: 6
