PECAN PIE MINI MUFFINS

1 cup packed brown sugar
1 cup chopped pecans
1/2 cup flour
2/3 cup butter, melted (no substitutes!)
2 large eggs, beaten
In a bowl combine sugar, pecans, and flour. Set aside.
Next mixing well, add butter and eggs. Stir into flour mixture - just till moistened. Fill greased and floured or paper-lined (I spray my papers with nonstick cooking spray) mini muffin tins 2/3's full.
Bake at 350 degrees F for 20-25 minutes or till muffin test done. Remove immediately to cool on wire racks.
Makes (about) 2 1/2 dozen
