Turkey Cutlets with Apples:

This is a simple way to prepare turkey cutlets that dresses them up a little bit.

4 large baking potatoes

1 teaspoon grated lemon rind
1/2 teaspoon dried tarragon
1 clove garlic, minced
1 pound turkey cutlets

2 teaspoons olive oil
2 Granny Smith or other tart baking apples, peeled and cut into 1/2 inch wedges
1/3 cup apple juice

1/2 cup nonfat sour cream
2 tablespoons snipped chives

Pierce the potatoes all over with a fork. Place a paper towel directly on the floor of the microwave. Arrange the potatoes on the paper towel in a square pattern. Microwave on high for 5 minutes. Flip and rearrange the potatoes. Microwave on high for 5 to 7 minutes, or until easily pierced with a fork. Cover with foil and let stand for at least 5 minutes.

On a plate, combine the lemon rind, tarragon and garlic. Lightly rub the turkey with the mixture.

Warm the oil in a large no-stick frying pan over medium-high heat. Add the turkey and saute for 3 minutes per side to brown the pieces. Remove to a plate and keep warm.

Add the apples to the pan and saute for 5 minutes. Stir in the apple juice. Return the turkey to the pan, cover, and cook for 3 minutes to soften the apples.

Using a slotted spoon, divide the turkey and apples among individual dinner plates. Split the potatoes and fluff the flesh with a fork; add to the plates. Whisk the sour cream into the juice remaining in the pan. Spoon over the potatoes. Sprinkle with the chives.

Preparation time: 15 min.
Cooking time 20 min.
Serves 4: Per serving 440 calories: 4.6 g. fat: 66 mg. cholesterol. 105 mg. sodium

If you don't have a microwave, bake the potatoes at 375 degrees F. for 1 hour, or until easily pierced with a fork. an alternative for occasions when you're pressed for time is to serve the turkey and apples over rice or pasta.
