Recipe(tried): Turkey Tenderloin Teriyaki Dinner...., Carrot Souffle, Italian Green Beans

It's been a beautiful day today here in Central Florida. I have been researching how to transplant young Laurel or Live Oaks as some of those acorns have taken root. As a result, we have several young trees around the perimeter of our house growing quite vigorously! We want to transplant them this weekend so DH had me go to the library to take out some books and I also went on-line to some sites seeking info.

One of the lovely things that our local Publix does for us is have yummy food samples in their store on Thursday, Friday and Saturday. Last Thursday I sampled a delicious turkey tenderloin made by Jennie-O. It is packaged much like the pork tenderloin, and it contains two tenderloins already marinated and seasoned. She was cooking this in one of those electric fryers...it was yummy! They are lean, healthy and delicious!! I usually buy whatever it is she is cooking. Sometimes it is sausages, sometimes Salisbury Steak, whatever it is, I buy!! It is amazing what you can cook in an electric fryer!!!

Tonight's menu is:

Turkey Tenderloin Teriyaki
Carrot Souffle
Green Beans
Strawberries and Cream

Here are are the recipes:

Turkey Tenderloin Teriyaki

1 Jennie-O brand Turkey Tenderloin Teriyaki

Preheat oven to 325. Bake in a pan for approximately 1 hour and 30 min. Slice and serve!

Carrot Souffle

1 lb. carrots, peeled and sliced
salt to taste
1/2 c. butter, melted
1/2 c. sugar
1 t. baking powder
3 T. flour
3 eggs
1 t. vanilla
1/4 t. Spice Blend*

*Spice Blend is a jar of spice I bought at Pier One a couple of years ago. When I went back to get more, they were out. Luckily I keapt the jar with the ingredients and now I make my own. It is simply equal portions grounded of:
ground coriander, ground cloves, ground cinnamon, sugar, aniseed, fennel seeds, and ground ginger. I ground it in the coffee machine grounder. It is fabulous.

Cook carrots in small saucepot in salted water covered til tender. Drain. Combine with butter in a blender or food processor and process till smooth.

Combine the sugar, baking powder, flour, eggs and vanilla in a bowl. Mix well and add to the pureed carrots and mix well.

Spoon mixture into a greased baking dish and bake at 350 for 45 mts.

Italian Green Beans

2 cans The Allens Sunshine Brand Cut Italian Green Beans
1 slice onion, chopped
1 slice red bell pepper, chopped
1/2 garlic clove minced
salt and pepper to taste

Put all ingredients in a saucepot and heat over med. until done, about 25 mts.
