Recipe(tried): vegetarian borscht

I do not use the meat versions, usually because I am making it in smaller quantities and am trying to limit my fat!! This tastes great, and can stand on its own!

1-2 cups cubed beets (peeled)
Beet tops from beets, or 1/2 cup baby spinach
1 cup thick sliced carrots
1 cup cubed potatoes
1/2 cup cut green beans (about 1 inch pieces)
1 onion, cubed
fresh dill, leaves and tender stalks, to taste
1/2 lemon
Vegetable stock or water to cover
salt and pepper to taste

Place all ingredients in large pot. Cover with vegetable stock. Bring to a boil. Boil for about ten minutes, then simmer until veggies are tender.

Fish out lemon before serving. If broth is too sweet, splash a little vinegar into your bowl. Top with sour cream!
