I gave myself a fun project - collecting bagel recipes! I started by looking at the flavors on bagel menus from popular bagel shops and while searching for recipes to duplicate those flavors I found many more! I didn't want to give you a gazillion recipes for each kind so I selected the recipe or recipes for each flavor that looked best to me. Click here to jump right to the recipe list.
If you haven't made bagels before I think you should give it a try at least once - you'll be surprised how easy it really is (and we won't even talk about the cost savings, bagels are basically just flour, water and yeast after all!) Oh, ok, let's talk about it :-) Don't get me wrong, I still love a good bakery bagel but a hot freshly-baked homemade bagel is a real treat and depending on the recipe and size of each bagel, 4 cups of flour will make about 6-12 bagels. There are 20 cups of flour in a 5 lb. bag of flour, so even a fancy-dancy bagel recipe with pricey ingredients will have a big cost savings.
And imagine the possibilities... you can add your choice of ingredients and toppings and how about this revelation: "Bagels can be made from any bread dough. In fact, the easiest way to begin is to start with a batch of our Hearth Bread dough." - King Arthur Flour - Hearth Bread Dough (King Arthur Flour). But if you like chewy bagels keep the hydration (wetness) of the dough in mind when adapting a bread recipe for bagels. Peter Reinhart says: "One of the characteristics of boiled water bagels is their tight crumb, featuring tiny airholes. This closely webbed structure helps bagels withstand boiling and also contributes to their chewiness. (Steamed bagels can have a more open crumb.) One reason for the firm, tight structure is the low hydration of the dough. Bagels typically consist of less than 60 percent water (sometimes as low as 52 to 55 percent); regular sandwich and French bread is made up of about 60 to 68 percent water while ciabatta and other rustic-style loaves can have up to 80 percent hydration."
