Vermont Maple Syrup Upside-Down Cake

Makes 8 servings

1 cup maple syrup
3 tablespoons sugar
1 tablespoon butter
1 egg
1/2 cup milk
1 cup sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Whipped cream, for serving (optional)

Preheat the oven to 400 degrees F. In a small saucepan, bring the maple syrup to a boil over medium-high heat. Pour the syrup into a greased 8-x-8-inch baking pan. In a bowl, using an electric mixer, cream together the sugar, butter, and egg until fluffy. Add the milk and blend in. In a separate bowl, sift together the flour, baking powder, and salt. Beat into the creamed mixture. Pour the batter into the syrup-lined pan and, with a spatula, spread the batter to the pan edges. Bake for 30 minutes or until golden. While still hot, invert the cake onto a serving dish. Serve plain or with whipped cream.
