SPICE AND APPLESAUCE SNACK CAKE
(Cake is mixed right in the baking pan.)
1 (2-layer size) pkg. Duncan Hines Spice Cake Mix
1/4 cup Crisco or Puritan oil
2 eggs
1 (16 oz.) can applesauce*
Preheat oven to 350 degrees F. Pour oil into a 13x9x2-inch pan. Tilt pan until bottom is covered with oil.
Put cake mix (dry), eggs, and applesauce into pan; stir with a fork or spoon until blended (about 2 minutes).
Scrape sides and spread batter evenly in pan.
Bake at 350 degrees F for 30-40 minutes; until toothpick inserted into center comes out clean. Set pan on rack to cool.
Cooled cake may be sprinkled with powdered sugar. Use a knife to loosen cake from sides; cut and serve directly from pan. Store leftover cake loosely covered.
*VARIATION:
Instead of applesauce use one of the following:
1 can (20-23 oz.) apple pie filling or 1 can (20-23 oz.) raisin pie filling. Mix, bake and serve as directed above.
