Recipe: Vinegar pie

OLD FASHIONED VINEGAR PIE
1 c. brown sugar
2 c. water
1 c. vinegar
2 tbsp. butter
1/2 c. flour and a little cold water
1 recipe of plain pie pastry
Combine sugar, water and vinegar and bring to a boil. Add butter and stir till it melts. Mix the flour with a little cold water to make a smooth slurry. Add this to the boiling liquid slowly, and stir till thickened. Line a pie plate with your pastry. Pour in filling and cover with strips of pastry in lattice fashion. Bake 10 minutes at 450 degrees, then reduce to 350 degrees and bake for 25 minutes more. OLD TIME VINEGAR PIE

1 c. cold water
3 egg yolks
1 whole egg
3 heaping tbsp. flour
2 tbsp. butter
5 tbsp. vinegar
2 tsp. lemon extract
Mix above ingredients together thoroughly. Cook until thick. Pour into baked pie shell. Beat whites of eggs until stiff. Add 4 tablespoons sugar and spread on pie. Place in oven and brown lightly. OLD - TIME VINEGAR PIE
1 c. sugar
3 heaping tbsp. all-purpose flour
1 c. cold water
3 egg yolks
1 whole egg
2 tbsp. butter
6 tbsp. vinegar
1 (9 inch) pie crust, baked
Mix sugar and flour in saucepan. Add water, egg yolks (reserve egg whites), whole egg, butter and vinegar. Cook until thick. Pour into baked 9 inch pie shell. For Meringue: Beat reserved egg whites until stiff. Add 4 tablespoons sugar, spread over pie. Brown meringue lightly. OLD FASHIONED VINEGAR PIE

1 c. sugar
2 eggs
2 tbsp. vinegar

4 tbsp. flour or cornstarch
1/2 stick butter
1/2 tsp. lemon extract
Combine all ingredients and cook until thick. Pour into baked crust.OLD FASHIONED VINEGAR PIE
3 egg yolks
1 c. sugar
1/4 tsp. salt
1 3/4 c. boiling water
5 or 6 tbsp. vinegar
1/4 c. corn starch
1/4 c. cold water
1 baked pie shell (8 or 9 inches)
MERINGUE:
3 egg whites
6 tbsp. sugar
1/4 tsp. cream of tartar
Dash of salt
Mix the corn starch, sugar and salt together. Add the cold water then the slightly beaten egg yolks. Mix well, then add the boiling water. Cook until thickened. Put in pie shell. Add meringue and brown. Beat egg whites with salt and cream of tartar while gradually adding the sugar.OLD FASHIONED VINEGAR PIE
1/3 c. white vinegar
1 2/3 c. hot water
1 egg, well beaten
1 tsp. lemon flavoring
3 tbsp. flour
1 c. sugar
2 tbsp. butter
Mix vinegar, water, egg and flavoring. Stir in mixture of flour and sugar. Add butter; cook in double boiler until thick. Note you can use a meringue on top.
