TUNA-IN-A-SKILLET
1(6 oz) can tuna
1 small onion, sliced
1 Tbsp. oil from tuna
2 1/2 cups canned tomatoes
1 bay leaf
salt and pepper, To Taste
1 cup UNCLE BEN'S Original CONVERTED Brand Rice, uncooked
Drain tuna; set aside and reserve oil.
Cook onion in 1 tablespoon reserved tuna oil in skillet until tender.
Stir in remaining ingredients. Add tuna and cover tightly. Cook over low heat for about 25 minutes until rice is tender and liquid is absorbed. (Use more water during cooking if needed.)
Remove bay leaf and serve.
Serves: 4
