Recipe: Vodka Sauce With Penne Noodles

Millie - this is the closest I could find - I'm sure you could substitute the canned tomatoes for fresh plum tomates and add some prosciutto.

Vodka Sauce With Penne Noodles

2 tablespoons olive oil
1/2 cup onion, finely chopped
1 garlic clove, finely chopped
1 can (28 oz.) crushed tomatoes
1/2 cup vodka
1/2 to 1 teaspoon crushed red pepper**
1/2 cup heavy cream
Penne noodlesHeat oil in skillet; add onion and saute until tender but not browned (about 5 minutes). Stir in garlic and saute 1 minute more. Add tomatoes, vodka and red pepper; simmer about 15 minutes until sauce is thickened. Stir in cream; simmer, stirring until sauce is thickened slightly (about 5 minutes). Serve over penne noodles.

**the first time you make this, you should go easy on the red pepper because it gets very HOT. It all depends on your taste.
