Wacky Lasagna

For a really colorful lasagna I make three layers....

1) shredded summer squash with sliced mushrooms, sauteed in olive oil and mixed with ricotta.

2) shredded carrots with parsley and onions, sauteed in olive oil and mixed with ricotta.

3) chopped spinach with garlic and nutmeg, sauteed in olive oil and mixed with ricotta.

Of course, separate each layer with the noodles and pour a tomato sauce of your preference over all. Sprinkle with parmesan and bake till golden on top
