Recipe(tried): Warm Spinach and Chevre Salad for Two

WARM SPINACH AND CHEVRE SALAD FOR TWO

2 slices bacon
3 cups fresh spinach leaves
1/4 cup creamy chevre
1 teaspoon bacon fat
2 teaspoons olive oil
1 teaspoon balsamic vinegar
pinches of salt and pepper

Cut 2 slices of bacon into 1/2-inch pieces.
Place them on a microwave safe plate, not paper towels. Microwave on high until crisp, about 2 minutes.

Meanwhile, tear 3 cups of fresh spinach leaves into bite-size pieces. Place in a bowl. Crumble 1/4 cup of creamy chevre over top of spinach leaves.

When bacon is cooked, pour 1 teaspoon of bacon fat into a small bowl. Whisk in 2 teaspoons olive oil, 1 teaspoon balsamic vinegar and pinches of salt and pepper. Microwave, uncovered, on high for 30 seconds until hot. Drizzle over salad and toss until coated. Sprinkle with bacon.
