Recipe(tried): White Chili

White Chili

4 split chicken breasts
2 1/4 cups water
2 Tbsp lime juice
1 tsp lemon pepper
1 tsp cumin (ground)

Combine chicken, water, lime juice, lemon pepper, and cumin in a saucepan or Dutch Oven. Boil chicken 28 minutes. Remove chicken and cut into 1 inch pieces; return to broth.

Heat 1 Tbsp of olive oil in a skillet and saute:
1 clove garlic, minced
1/2 cup onion, chopped

And to stock with:
1 can of shoepeg corn, drained
2 cans northern beans, undrained
1 can chopped green chilis, undrained
1/2 tsp cumin

Heat. Serve with tortilla chips and shredded Jack cheese.
