According to my friend's mom, the following was the White House recipe during JFK's time and his FAVORITE. I've made it for family and company - it's always a hit!
1/4 cup butter or margarine
1 large leek, chopped
1/2 cup chopped onions
1 quart thinly sliced raw potatoes
1 Tbsp salt
1/4 tsp pepper
3/4 cups water
1 1/2 cups milk
1 bunch watercress
1 1/2 cup water
Heat butter in large saucepan, add leeks and onions, Saute till tender (about 4 minutes)
Add potatoes, seasonings, and 3/4-cup water. Cover; bring to boil. Reduce heat and simmer till potatoes are almost tender.
Cut watercress stems into 1/8-inch lengths. Chop leaves coarsely.
To potato mixture, add watercress stems, half of leaves, milk and 1 1/2 cups water. Cook 15 minutes more.
Cool. Place mixture in processor or blender in batches. Run on high speed until pureed.
Reheat. Thin with milk if needed.
